This is my new main stay meal. Since I started having problems with my blood sugar I only ate Stir-Fry only on occasion when I went out for dinner for Chinese or Mongolian. Now I eat Stir-Fry two or three times a week. When prepared with low fat and whole grain ingredients it is a very healthy one dish meal. |

Ingredients:
Vegetable cooking oil 1 Package Uncle Ben's 90 Second Ready Whole Grain Rice 6 oz pre-cooked boneless, chicken breast, diced 1 tsp hot chili flavored sesame oil 3 1/2 cups of your favorite vegetables, chopped soy sauce, vinegar, and garlic chili sauce to taste Bottled Peanut sauce purchased from international section of most grocery stores.
Preparation:
Coat a nonstick pan with vegetable oil; saute briefly chicken over medium-high heat. Remove from pan. Add oil, vegetables; cook until tender. Return chicken to pan; Stir-Fry 3 minutes.
Add soy sauce, vinegar, and hot sauce and mix. Divide Stir-Fry and sauce into two portions. Set second serving aside for another meal. Serve over 3/4 cup whole grain rice. |
